1. 76/105 new recipes

72. Roasted Veggie Farro Bowls with marinated cranberries and Salsa Verde Sunflower Pepitas (Hello Fresh) – DANG this was good. That arugula, that farro, those marinated cranberries and flavored pepitas!
73. Creamy Santa Fe Gemelli Bake with Hot Sauce (Hello Fresh) – This was like Mexican mac and cheese. Good but SO MUCH DAIRY. I would like to veganize it though.
74. Quick-Pickled Onions (Minimalist Baker’s Everyday Cooking by Dana Shultz) – These were super simple and they have become a regular thing! I just always have some in the fridge now, I put them on everything.
75. Carrot, Potato + Chickpea Red Curry (Minimalist Baker’s Everyday Cooking by Dana Shultz) – This was a great, simple and flavorful curry.
76. Vegan Pumpkin Cake (https://lovingitvegan.com/vegan-pumpkin-cake/– This is really good, not too sweet, tasted a little muffin-y but like, I love that about it.

4. Saturday movie nights

Established that movie night is movie night, Saturday or no. We have been watching movies a lot more lately! It’s movie season, between Halloween and Christmas, so it’s not a total shock, but I’m also happy to be watching more when I was watching so few at the start of this challenge!

66. Zucchini and Tomato Flatbreads with Lemon Ricotta, Basil, Honey and Chili Flakes – (Hello Fresh) 
67. Gnocchi in a creamy sauce – This was a combination of some other recipes I have made in the past that I veganized. It was outstanding, but who knows if I could recreate it, haha.
68. Black Bean Burgers (recipe from a friend, and veganized) – The tastiest bean burgers I have ever made. The original recipe was not vegan (contained egg and cheese) but with a bit of tweaking it was really great. We had it on tacos the first night because it needed more tweaking to hold a burger form, but the next night I added some stuff to the mix and got some good patties!
69. Garlic Herb Tortelloni (Hello Fresh)
70. Roasted Veggie Caprese Bowls with Farro and Balsamic Vinaigrette (Hello Fresh) This was nuts good. I love farro so much.
71. Southwest Stuffed Poblanos (Hello Fresh) – Made this one and then made a veganized version within a week. So tasty.

4. Saturday movie nights

I guess we didn’t watch many movies in September! We were mostly binging Steven Universe because it’s just the best, but now we are Saturday #VampireMovieFun-ing with friends!

We watched all of Steven Universe (can say that for sure since they have announced the next season is a sequel season and NOT season 6) and the movie.

13. Play more video games

I played SO MUCH No Man’s Sky last month. This isn’t even all of the pictures, it’s just the ones from the first week that I had backed up onto a usb stick when our PS4 stopped working. I’ll put the rest in my post next month, haha.

20. Yoga Goals

I’m not back to a good routine yet. I’ve been a lot busier this last little while and it’s been hard. I did more in September than I did in August, though, so that’s a win.

1. 30/105 new recipes

It was kind of a slow new recipe month but I’m finally getting some baking done in the new oven!

27. Garlic “Cheddar” Herb Biscuits (The Minimalist Baker’s Everyday Cooking by Dana Shultz) These were a bit too Nutritional Yeasty for my taste and a little dense (my fault!) but they were super good dipped in soup!
28. Simple Carrot & Curried Lentil Soup (The Minimalist Baker’s Everyday Cooking by Dana Shultz) The maple syrup made this too sweet as it was written, but I remade it a couple of weeks later without it and it’s a new favorite for Shaun.
29. Heirloom Tomato Flatbreads with Pesto, Fresh Mozzarella and Balsamic Greens (Hello Fresh) I loved how green these were. I’ve been craving the heck out of a salad lately and getting it on a pizza was dreamy.
30. Roasted Garlic Herb Penne with Asparagus, Tomatoes and Crispy Capers (Hello Fresh) Capers are the best thing that has ever happened. Crispy Capers are like superhero Capers. Caped Capers. 


3. A Weekly Effort 

I’ve been going to school with Shaun once a week and working in his office. It kind of defeats the idea I had that I would be more productive AT HOME if I pulled myself together a bit but the whole experience has definitely been good for my brain. I never remember to take pictures. It’s where I am today though, so here’s a fresh selfie! The freshest!

We skipped one Saturday this month because I took my mom, brother & Shaun out for a big birthday dinner.

My output it significantly less than it was last year, so this one has become super easy! I’m feeling pretty motivated to get film developed soon. It’s what I think about when I let myself have a ~creative break~ so that’s exciting, actually. 

13. Play more video games

This has been a great video game month! Kingdom Hearts III came out at the end of January. Shaun and I have been taking it pretty slow because we are playing it together and we don’t have as much overlapping video game time but I’m actually enjoying the pace. I have so many feelings. I love that I get to take lots of pictures in the game! I’m not at home so I can’t get them off of my account to put them in this post and I’m full of regret. I’ll put a million Sora selfies in my update next month!

I have gotten super-duper into Sims 4 again. I started a new legacy challenge style game and I have been really working on building cute houses. 


I got Final Fantasy IX for the Switch this past month too. This is the 3rd or 4th time I have gotten this game, haha. My brother got the first copy for me for Christmas 2000! I like the PC version because of the modded background improvements and there are some glitch fixes but I honestly haven’t been bothered by any of this playing it on the switch, especially when I’m playing it handheld.



17. Monthly Date Night

It still counts as a date night if my mom & brother are there, right? Family date! I love my birthday kids!


18. Work on the house/yard

I got a lot of stuff figured out in the kitchen. I’ve switched a bit of my mental house effort into helping my mom get the house she is moving into livable. It needs a lot of work!

20. Yoga goals

This took a total backseat to everything else this month. I haven’t been home as much and I need to figure out a new routine because I actually like being home a little less and I want to fit yoga into that. I did do a bit of yoga that I didn’t take photos of. Maybe only 7 days total in the past month and that was mostly the first week.

Eleven Months into 30 before 30

1. Cook 30 new recipes 86/30 I made 3 new recipes this month! I actually made 2 other things for the first time, but one was something super easy that I made without a recipe (daiya quesadillas) and the other was so altered in ingredients (gumbo is literally not gumbo without okra) that I didn’t feel right including it.

2. Shoot 1 roll of film per month. 11/12 I got a super late start this month again, I didn’t actually finish my June roll until July 4th and then I decided to finish a mysterious roll that was in my Vivitar Ultra Wide & Slim. Who knows when I started it? My hope was that it would actually only have a few shots left and I could pop a fresh roll into it and use it for July but that didn’t happen until the 14th! The roll is about halfway shot, now!

7. Reach Advanced Level yoga with Erin Motz’s DoYouYoga course.

Day 74: Saw lots of friends doing this today for #backbendnoend and I really wanted to try it. It felt really good! Especially on the side I am doing in the bottom picture. Weirdly effortless and dreamy. #yoga #100happydays

16. Veganize 10 of my family’s recipes. 0/10

I thought this was going to be one of the easy ones, but my mom’s recipe cards are missing! I have some family church cookbooks that have some distant relatives in them, but most of the recipes that appeal to me are vegan already! One of them is for canned vegetable soup and another for pickles!

17. Make canned pickles!

My plan is to make the kind of pickles you can pretty much eat immediately. Basic vinegary cabbages, or something. Totally delicious and stress free. Not going to get into heat sealing yet. Doing what I can to get this stuff done. Real pickles is still a future goal! I got some super cute little jars earlier this month, so… that’s progress!

Starting this goal took longer than I had expected! It seems unbelievable that we hadn’t seen a movie in the theater since sometime before my last birthday, but it just hasn’t been in our budget.

28. Write a list of major cleaning projects and do them all!

  • move all furniture and clean behind/under it. (fridge, dressers, couch, entertainment center.) (Progress: Calling this done. Kitchen, bathroom, living room done in month 6. One half of bedroom done in month 7. Library is still such a work in progress that I doubt I’ll get it finished, but all of the rooms we use regularly are looking good. I just need to do a little more in the bedroom and some of that requires getting rid of furniture. It should get done in the next year)
  • clean the fridge out. (Progress: Fridge done. Still need to hit the freezer!)
  • take ALL THAT RECYCLING so the cozy system can start working. (Progress: Done.)
  • take everything to Goodwill. (Progress: One carload done, only have a few boxes left to go.)
  • finish each room. If I still have to have stuff piled in a corner, at least let it be stored in a plastic tub. (Progress: Living room: Done. Laundry room: Done. Dining Room: as done as it will get. )
  • closet overhaul. (Progress: Started the bedroom closet. Made a lot of hanger space, so far, need to work on the stuff that’s on shelves next!)
  • Springtime Garden Tidy. (Progress: I managed everything by the back lot, and now it’s summer and unbearable. Major progress though! Calling it done. Everything else is maintenance.)

Only one month to go! I’ll be hustling to get some of this stuff done and accepting that other things just won’t happen, yet. But I’m not giving up on anything!

7. Reach Advanced Level yoga with Erin Motz’s DoYouYoga courseI did some really non-yoga yoga to start the month, this 14 day shred with Sadie Nardini. Generally not my thing, but I’ve been wanting to do more real cardio, so I think it’s been good for me. I don’t regret doing it, but I doubt I’ll ever repeat it. I got knocked down by some bad allergies in the middle of it, which made breathing a struggle, but I made it through the 14 days. I decided to check in with Wii Fit yoga after I finished that challenge and immediately pulled something in my shoulders, so I had to take some time off to heal. Slow and easy stretching yoga for a week or so and I think I’ll be back on my feet.

8. Finish 5 video games. 2/5 I’ve left some visual novels off of this, but I am counting Gone Home, I don’t know why, maybe because it was so damned good. I also played through a couple of scenarios in Hatoful Boyfriend, but it’s so quick and silly, and I played The Yawhg with friends and with Shaun a few times. Mostly I have been playing Dragon Age: Inquisition for a couple of months and I beat it on March 5th, I clocked just over 100 hours in my first play-through and started a new character immediately. I need to mix it up a little because I’m not going to count it twice if/when I beat it again!

  3. take ALL THAT RECYCLING so the cozy system can start working. (Progress: Still need to take the paper. Also have another full load of cardboard boxes already.)
  4. take everything to Goodwill. (Progress: Added two boxes and one large tub to the piles of stuff that needs to go.)
  5. finish each room. If I still have to have stuff piled in a corner, at least let it be stored in a plastic tub. (Progress: Got curtains hung in the living room, I need one tension bar and 4 hooks installed to pull the curtains back with and the room will be done.)
  6. closet overhaul. (Progress: Just little bits here and there throughout the month in the bedroom closet. I really thought I would get it done this month, but other life things kind of got in the way.)

25th of February – 25th of March is a short month! I didn’t get everything done this month that I had hoped to. I’m definitely starting to feel the crunch on some of these, I need to make a timeline list and work on some of the more ongoing things, like scanning my mom’s photos, more often.
