63 – 64. Verdant Couscous with Spicy Mustard Greens – Afro-Vegan: Farm-Fresh African, Caribbean, and Southern Flavors Remixed: A Cookbook by Bryant Terry – I’m counting this as two recipes because the Spicy Mustard Greens are definitely their own thing. I tossed them into a few recipes over the next week and they were SO TASTY and spicy. This was so smokey and bright tasting. Just really great.
65. Crispy Chickpea Tabbouleh Bowl with Creamy Feta Dressing – Hello Fresh – Got a Hello Fresh box for my birthday week and it has a couple of new recipes in it. We have had a few recipes with baked chickpeas in them and now I bake chickpeas before I put them into anything. They’re so delicious! This was maybe the second time I have used Bulger wheat and it was really good.

  1. The Local Bison

Shaun got an Impossible burger (our first, I had a taste. I think it was better than the Beyond burger but also I’m not missing meaty tasting things. I really, really like a veggie burger that tastes like veggies and grains. It’s fun to try new things, though!) and I had the vegan sandwich of the week, which was deep-fried mushrooms on a sub. I definitely want to go back and try more of their vegan options, of which there are many.

39. Veggie Chile Rellanos with Avocado Salsa and Zesty Crema (Hello Fresh) – This was super good.
40. Roasted Broccoli and Potato Chowder with Pepper Jack Cheese and Garlic Toast (Hello Fresh) – This was good, maybe the best soup like this I’ve ever had, but the toast was boring.
41. Smoky BBQ Veggie Burgers (The Minimalist Baker’s Everyday Cooking by Dana Shultz) – These were super good. A little crumbly but still extremely good. The ones that had fallen apart were extremely good the next day all crumbly in a sort of burrito bowl.
42. Miso Soup – I just looked at some general ingredients and threw this one together. But I’m still counting it because I had never made it before! :D
43. Bok Choy Namul (https://www.onegreenplanet.org/vegan-recipe/bok-choy-namul-korean-bok-choy/) – Oh I loved this A LOT. So simple and delicious.
44. Dobu Jorim (https://www.abeautifulplate.com/traditional-korean-braised-tofu/) – I used this specific recipe because this wasn’t something I specifically SHOPPED for and I had everything for this particular one. It was fine but I would like to try some others!
45. Katsu Curry Sandwiches – I wasn’t going to include this because it’s just me putting a bunch of pre-packaged stuff together. The Gardein veggie-turkey cutlets reminded me of chicken katsu sandwiches so I made some Golden Curry sauce and got some sweet Hawaiian buns and it was really tasty. Steamed some broccoli and made frozen steak fries to go with it. I want to remember that I made this and it made me pretty happy so I’m putting it in my 35 before 35, so there!
46. Tofu Curry with Mustard Greens (Afro-Vegan) – This was outrageously good. I love greens so much. I burned the tofu (first time in almost a decade!) so I used some pre-packed seitan in its place. I can’t wait to remake it properly!

I have played lots of Breath of The Wild, but even though there is a camera function in the game there’s no good way to share the pictures. OUTRAGEOUS. Anyway, I started a new Stardew Valley farm and I’m using the super cute guidebook and I’m enjoying it a lot. I’m feeling like playing some sims and revisiting some Bioware games right now, though, the nostalgia is so strong and comforting. I just installed Dragon Age Origins on my laptop, so that’s exciting.

Had a nice one last Friday night, things are pretty busy and hectic right now but it’s always nice to sit down for some curry together.

I got a new toilet seat and replaced the fill valve in our toilet! I’ve also been working on the yard a lot the past few weeks.

20. Yoga Goals

I’m definitely doing less than I want to be doing right now. My shoulders have been acting sketchy and I’ve been being very careful, as well as being super active in other ways lately.

It was kind of a slow new recipe month but I’m finally getting some baking done in the new oven!

27. Garlic “Cheddar” Herb Biscuits (The Minimalist Baker’s Everyday Cooking by Dana Shultz) These were a bit too Nutritional Yeasty for my taste and a little dense (my fault!) but they were super good dipped in soup!
28. Simple Carrot & Curried Lentil Soup (The Minimalist Baker’s Everyday Cooking by Dana Shultz) The maple syrup made this too sweet as it was written, but I remade it a couple of weeks later without it and it’s a new favorite for Shaun.
29. Heirloom Tomato Flatbreads with Pesto, Fresh Mozzarella and Balsamic Greens (Hello Fresh) I loved how green these were. I’ve been craving the heck out of a salad lately and getting it on a pizza was dreamy.
30. Roasted Garlic Herb Penne with Asparagus, Tomatoes and Crispy Capers (Hello Fresh) Capers are the best thing that has ever happened. Crispy Capers are like superhero Capers. Caped Capers. 


3. A Weekly Effort 

I’ve been going to school with Shaun once a week and working in his office. It kind of defeats the idea I had that I would be more productive AT HOME if I pulled myself together a bit but the whole experience has definitely been good for my brain. I never remember to take pictures. It’s where I am today though, so here’s a fresh selfie! The freshest!

My output it significantly less than it was last year, so this one has become super easy! I’m feeling pretty motivated to get film developed soon. It’s what I think about when I let myself have a ~creative break~ so that’s exciting, actually. 

13. Play more video games

This has been a great video game month! Kingdom Hearts III came out at the end of January. Shaun and I have been taking it pretty slow because we are playing it together and we don’t have as much overlapping video game time but I’m actually enjoying the pace. I have so many feelings. I love that I get to take lots of pictures in the game! I’m not at home so I can’t get them off of my account to put them in this post and I’m full of regret. I’ll put a million Sora selfies in my update next month!

I have gotten super-duper into Sims 4 again. I started a new legacy challenge style game and I have been really working on building cute houses. 


I got Final Fantasy IX for the Switch this past month too. This is the 3rd or 4th time I have gotten this game, haha. My brother got the first copy for me for Christmas 2000! I like the PC version because of the modded background improvements and there are some glitch fixes but I honestly haven’t been bothered by any of this playing it on the switch, especially when I’m playing it handheld.



17. Monthly Date Night

It still counts as a date night if my mom & brother are there, right? Family date! I love my birthday kids!


18. Work on the house/yard

I got a lot of stuff figured out in the kitchen. I’ve switched a bit of my mental house effort into helping my mom get the house she is moving into livable. It needs a lot of work!

20. Yoga goals

This took a total backseat to everything else this month. I haven’t been home as much and I need to figure out a new routine because I actually like being home a little less and I want to fit yoga into that. I did do a bit of yoga that I didn’t take photos of. Maybe only 7 days total in the past month and that was mostly the first week.

We went for a walk. It was almost a little too cold, but actually perfect. We saw a bunch of cats, and cast long shadows as we turned towards home. I missed another week after this because I spent the whole week finally getting back on top of things around the house after having been on vacation and then ill.

Projects through the years: a year in photos 2013

2013 was an extra fun year. I crocheted A LOT, all year long. I upgraded the power supply, graphics card and RAM in my desktop which turned my computer into a wonderful piece of work, we got passports because we road tripped all the way to Canada, via Seattle, we spent about a month in the PNW, which was a total dream, my mama painted a beautiful tree for me and I felt really creatively fulfilled all year long. 1. Cook 30 new recipes 86/30 I made 3 new recipes this month! I actually made 2 other things for the first time, but one was something super easy that I made without a recipe (daiya quesadillas) and the other was so altered in ingredients (gumbo is literally not gumbo without okra) that I didn’t feel right including it.

Who knows when I started it? My hope was that it would actually only have a few shots left and I could pop a fresh roll into it and use it for July but that didn’t happen until the 14th! The roll is about halfway shot, now!

7. Reach Advanced Level yoga with Erin Motz’s DoYouYoga course.

Day 74: Saw lots of friends doing this today for #backbendnoend and I really wanted to try it. It felt really good! Especially on the side I am doing in the bottom picture. Weirdly effortless and dreamy. #yoga #100happydays

16. Veganize 10 of my family’s recipes. 0/10

I thought this was going to be one of the easy ones, but my mom’s recipe cards are missing! I have some family church cookbooks that have some distant relatives in them, but most of the recipes that appeal to me are vegan already! One of them is for canned vegetable soup and another for pickles!

17. Make canned pickles!

My plan is to make the kind of pickles you can pretty much eat immediately. Basic vinegary cabbages, or something. Totally delicious and stress free. Not going to get into heat sealing yet. Doing what I can to get this stuff done. Real pickles is still a future goal! I got some super cute little jars earlier this month, so… that’s progress!

Starting this goal took longer than I had expected! It seems unbelievable that we hadn’t seen a movie in the theater since sometime before my last birthday, but it just hasn’t been in our budget.

  • move all furniture and clean behind/under it. (fridge, dressers, couch, entertainment center.) (Progress: Calling this done. Kitchen, bathroom, living room done in month 6. One half of bedroom done in month 7. Library is still such a work in progress that I doubt I’ll get it finished, but all of the rooms we use regularly are looking good. I just need to do a little more in the bedroom and some of that requires getting rid of furniture. It should get done in the next year)
  • clean the fridge out. (Progress: Fridge done. Still need to hit the freezer!)
  • take ALL THAT RECYCLING so the cozy system can start working. (Progress: Done.)
  • take everything to Goodwill. (Progress: One carload done, only have a few boxes left to go.)
  • finish each room. If I still have to have stuff piled in a corner, at least let it be stored in a plastic tub. (Progress: Living room: Done. Laundry room: Done. Dining Room: as done as it will get. )
  • closet overhaul. (Progress: Started the bedroom closet. Made a lot of hanger space, so far, need to work on the stuff that’s on shelves next!)
  • Springtime Garden Tidy. (Progress: I managed everything by the back lot, and now it’s summer and unbearable. Major progress though! Calling it done. Everything else is maintenance.)

Only one month to go! I’ll be hustling to get some of this stuff done and accepting that other things just won’t happen, yet. But I’m not giving up on anything!

18. Print another photo book.

Since this project has involved going through and re-editing my photos it has taken a long time. I’m somewhere in the middle of October of 2007 for a photo book that will only span June – December of that year and I’m already past 200 pages. When I was first starting to really practice and study photography I was super prolific, whoops. I’m going to admit that I might not be able to afford to actually PRINT this book until after my birthday, I will consider this done if I finish all of the other work involved because I have put many hours into it.

Here’s a couple of two-page spreads I’m really happy with:

In 2007 I had some interest in being a commercial photographer, at least in terms stock photography. I have a lot of stuff I shot with that aim that I really love in retrospect but actually shooting photography for someone other than myself wasn’t fun at the time and I decided to focus on more emotive/photo diary work. I’m curious what future photo books will be like, especially everything past the death of my dad in December of 2008, when I realized that capturing and remembering my real life was the most important thing to me artistically.
